Pumpkin Risotto Balls

Need a last minute snack idea for a Christmas get together? Want to simply just fancy up your risotto? Oh boy, do we have the recipe for you today! This super simple, two ingredient recipe comes together very quickly, and results in a fun way to consume risotto. Let us present, Pumpkin Risotto Balls!

 

 

Ingredients (makes 10)

1 serve of Nourish'd Pumpkin Risotto (Large)

Gluten free breadcrumbs

 

Method:

  1. Preheat your oven to 175 degrees celsius.

  2. Pour around ½ a cup of breadcrumbs onto a dry plate.

  3. Scoop a heaped teaspoon of risotto and roll into a ball, then place in the breadcrumbs ensuring all sides are coated!

  4. Place the crumbed risotto ball onto a lined baking tray.

  5. Repeat steps 2 and 3 until all the risotto is rolled!

  6. Bake in the oven for 30 minutes, or until the tops are golden.

  7. Remove from the oven and allow to cool, before serving with your favourite dipping sauce (we recommend a chilli jam!)
