Want pancakes, but need it to be meal prep friendly? Don't worry! We're combining the best of both worlds (banana bread AND pancakes!!) into a meal prep friendly recipe that will keep you going and going and going...
Ingredients:
1 1/2 cup Nourish'd Plant Protein Pancake Mix
1/2 tsp bicarb soda
Dash of cinnamon
2 medium sized bananas
1/2 cup + 2 tblsp milk of choice
1/4 cup plain or vanilla greek yoghurt
1/2 cup chocolate chips (or chopped chocolate!)
Method:
- Preheat your oven to 175C, and line a loaf tin with baking paper!
- In a large bowl, mix together the pancake mix and cinnamon.
- In a blender, blend the banana, milk and yoghurt until smooth!
If you don't have a blender, mash the banana with a fork until very smooth and mix in the yoghurt and milk. - Carefully fold the wet ingredients into the dry until just combined. Add the chocolate, and stir them through.
- Pour the batter into the tin and spread the batter evenly, smoothing out the top.
- Bake for 20 - 30 minutes. The loaf should be golden on top and a skewer should come out mostly clean (a few crumbs are okay!). Allow the loaf to cool for 5 minutes in the tin, then place on a wire rack until cooled completely!
Our recommendation for serving? Serve warm as is! But if you want to take it to the next level, add some extra yoghurt, berries, and granola or nut butter. Healthy but indulgent!!
