As a parent, I know first-hand how tricky it can be to come up with healthy, simple lunchbox ideas that actually get eaten. I recently found myself in this exact position—standing in front of the fridge, looking for a quick, nutritious snack for my toddler. That’s when I spotted a Nourish’d Nasi Goreng, and this quick little recipe was born.
These Nasi Goreng Quiches are packed with flavour, sneak in extra veggies, and are so simple to throw together. They’re perfect for lunchboxes, after-school snacks, or even a quick bite for yourself.
The best part? You only need a few staple ingredients and about 20 minutes of baking time.
What You’ll Need:
- 🥢 1 x Regular Nourish’d Nasi Goreng
- (Remove the fried egg and any large vegetable pieces like snow peas. For nut-free schools, simply skip the almonds.)
- 🥚 4 Eggs
- 🥛 1/4 cup Cream
- 🧀 1/2 cup Cheese
How to Make It:
- Preheat your oven to 180°C.
- In a bowl, whisk together the eggs, cream, cheese, and Nourish’d Nasi Goreng.
- Pour the mixture into greased muffin tins. (Tip: don’t overfill, they rise a little while baking!)
- Bake for 20 minutes or until golden and set.
