Muesli Cookies

Delicious, chunky cookies that are not only gluten free, but dairy free, soy free AND vegan friendly! Check the recipe below made by our Nourish'd Nutritionist, and get baking using our muesli :)

 

 

Ingredients:

1 tblsp chia seeds

2 cups Nourish’s House Blend Muesli

½ cup almond meal

Dash of cinnamon

¼ cup rice malt syrup (maple syrup or honey would also work!)

¼ cup all natural peanut butter

(Chopped chocolate, optional)

 

Method:

  1. Preheat the oven to 175C.

  2. Mix the chia seeds with 3 tablespoons of water and set aside to thicken.

  3. Stir together the dry ingredients in a large bowl.

  4. In a separate, smaller bowl, combine the rice malt syrup, peanut butter and chia seed mixture.

  5. Pour the wet ingredients into the dry and form a dough.

  6. Roll dough into 14 separate balls and place on a lined baking tray. Gently flatten.

  7. Bake in the preheated oven for 12 - 15 minutes, or until golden around the edges.

  8. Allow to cool for 5 minutes before enjoying!
