Kom- what – cha you say? Wanna know more about what the hell Kombucha is and why it’s so darn good?
In a nutshell, Remedy Kombucha (often lovingly referred to as “booch”) is a fermented drink that is damn tasty and actually healthy.
The traditional method of making kombucha – which is followed by Remedy (See here)– involves a natural fermentation of sweet tea, wild healthy bacteria and yeasts.
The result is a tasty drink with sweet and sour flavours that contains healthy, living bacteria and organic acids that are good for your gut and overall wellbeing.
Before you go passing it off as a fad, you should know that people around the world have been making and enjoying kombucha for thousands of years, particularly throughout Eastern Europe and Asia. Ask around. We bet you’ll find someone who has been brewing their own booch forever!
Why is Remedy Kombucha so good for you?
At Remedy, we brew in small batches following an old-school process. To kick off, we brew up a batch of organic green and black tea, which is teeming with stacks of healthy antioxidants called polyphenols. The powerful polyphenols found in tea scavenge for cell-damaging free radicals in your body and work on detoxifying them. They are the best part of tea, and we only use the finest quality tea with high levels of polyphenols in our brews.
Next up, we add our live, raw kombucha culture also known as a SCOBY (Symbiotic Community of Bacteria and Yeast). This is where things get really interesting as the natural fermentation process does its thing. There are several stages to this process, conducted by many different organisms. Yeast of the Saccharomyces genus and bacteria (the good kind!) from Acetobacter and Gluconobacter species are just some of the major contributors.
During the fermentation, these good bacteria produce short chain fatty acids (SCFAs), also known as organic acids. These are the same acids naturally produced by the healthy bacteria in your gut, supporting your immune system, metabolism and overall health. SFCAs have some pretty important jobs in your body, such as to:
- Prevent overgrowth of bad pathogenic bacteria, by lowering the pH of the gut environment.
- Provide an energy source for the probiotic bacteria in your gut.
- Increase the body’s ability to break down fats
- Assist in regulating appetite
- Help stabilise blood sugar levels
- Help to regulate cholesterol.
Additionally, Remedy naturally contains no sugar. Our fermentations are long-aged, which means all of the sugar is consumed during fermentation and converted into those SFCAs/ organic acids that we keep raving about! This is why Remedy is the only kombucha to have the official tick of approval from I Quit Sugar.
We don’t filter or pasteurise our kombucha, so the SCOBY that we use – a descendant of the same one we started out with – is present in every bottle. We conduct extensive microbial testing to ensure it stays alive right through shelf life. In addition to increasing the diversity of your gut flora, our live culture can also have a prebiotic effect, providing a food source for your gut bacteria.
